Saj Tava


  • 500 gr lamb, cut in small pieces
  • Small pieces lamb tail fat or 1 tbsp butter
  • 1 medium size onion, chopped in small pieces
  • 1 big size tomatoe, peeled and chopped in small pieces
  • 2 banana peppers and red peppers, cut in small pieces
  • 3 pinch of isot pepper (The core rate of zero and a silky texture and grown only in the world isot Sanliurfa in Turkey is a type of pepper)
  • 2 pinch of red pepper
  • 1 tbsp red pepper paste
  • Salt
  • Savory
  • Garlic

Recipe:Let’s start to cook the lamb with butter. The cooking process is supposed to be in a saj tava (a Turkish cooking vessel) or If you don’t have it, you can use wok (a Chinese cooking vessel). Stir the lamb constantly. When the color turn to light brown, stop stirring. Continue to cook the lamb with its own juice. When there is no more juice in saj tava, add the rest of ingredients. When the peppers, onion and tomatoes are tender, take the saj tava from the fire. Bon apetit.
